This is my favorite weeknight dinner and it's super easy to make. Plus, you probably have most of the ingredients in your pantry right now!
Makes 2 servings
Time: 25 minutes
1 large salmon fillet
A lot of olive oil
1 T salt
1 T pepper
1 t brown sugar
1 t red pepper flakes
Basil (fresh preferred)
Preheat your oven to 425. Take a large glass dish and place a piece of tinfoil on the bottom. Slather it in olive oil. Place your salmon on top. Pour olive oil all over your fish. Then cover the top of the fillet in the salt and pepper. Depending on your tastes you can add less or more.
Sprinkle the brown sugar on top of your fish as well, but take care that it's scattered. You don't want it to settle in any one particular place otherwise you're going to get some very concentrated sweet spots (ew). Sprinkle on the red pepper flakes. If you're using fresh basil, lay basil leaves atop the entire fillet. If you're using dried basil, sprinkle enough so that it covers your fillet.
Cook in oven for 15 to 25 mins depending on how big your piece of fish is or how well you want it done. Serve hot.
